Paneer pepper fry is a spicy dish. It can be served as a starter or evening snack.

Ingredients:

Kitchen equipment’s required:
1. Stoneware masher or mixer grinder
2. Wide pan
3. Bowl
Procedure:
Preparation phase:
Preparation time – 30 minutes
Step 1 : Marinate Paneer
Marinating the paneer takes long time, so start marinating first.
1. Crush the pepper and make it as coarse powder using stoneware masher or mixer grinder.
2. Take a bowl, add the chopped paneer. Then few drops of cooking oil.
3. Sprinkle garam masala and the crushed pepper as per the ingredients list.
4. Gently mix them and allow it marinate for 30 minutes.
Step 2 : Masala preparation for Paneer Pepper Fry - Dry
As the paneer is getting marinated, other ingredients shall be prepared
1. Take the pepper, cumin and fennels seeds as per the ingredients list.
2. Grind them using stoneware masher or mixer grinder and kept it aside.
Step 3 : Chopping the vegetables
1. Chop the onions and capsicum into small pieces.
2. Chop the green chillies into fine slices
3. Similarly chop the ginger into small pieces and make sure it is only of a teaspoon.
(adding limited ginger allows the flavour of pepper and chilli to enhance)
4. Finely chop curry leaves as well and keep all of them ready for cooking.
Cooking phase:
Step 1 : Shallow fry the paneer.
1. Take a wide pan.
2. Add 2 tbsp of cooking oil (I used wood pressed groundnut oil) and heat it up.
3. Now, add the marinated paneer.
4. Cook it for about 3 minutes in high flame covering all sides of the paneer.
(Cooking paneer in high flame allows moisture to be retained within itself)
5. Flip the paneer, when the paneer becomes light golden in colour.
6. Turn off the stove when all sides are fried and keep it aside.
Note: if the paneer is overcooked it will become hard on its top layer. As you see the picture above, few paneer turned brown as it was overcooked. So please be careful.
Step 2 : Preparing the dry masala to coat the paneer pepper fry
1. Use the same pan and left over cooking oil used for frying the marinated paneer.
2. Allow the pan to heat up.
3. Now, add the mustard seeds. Let it splutter.
4. Add the chopped green chillies, ginger and curry leaves.
5. After few seconds, add chopped onions.
6. Allow the onions to turn light gold.
7. Now, add the chopped capsicum.
8. Cook it for 2 ~ 3 minutes until it is slightly cooked.
9. Add the fried paneer.
10. Saute for a minute and serve hot.
(Be gentle while mixing the paneer to avoid it getting broken)
Optional:
1. In case if you prefer the dish as gravy, add 1 tbsp of soy sauce and ¼ cup of hot water in step number 8.
2. For garnishing, use spring onion greens or coriander leaves as per your wish.
